On Matters of Beef, I Defer to the Experts

Plaza III, arguably the best steakhouse in Kansas City, now includes in their ad copy that “the beef is corn-fed, custom selected and aged.” While those with an uninformed palate might follow the grass-fed trend as they buy into the hype, the owners of Plaza III really know steak and they not only choose corn-fed beef – they boast about it.
So if you want to follow the herd, go ahead and eat something that eats something that you wouldn’t eat. As for me, I listen to the old timers. People who have withstood trendy advertising campaigns and really know their craft. Next time I go out I will ask, unabashedly, if my steak enjoyed corn. I know that I do.

I second the notion that Plaza III is the best steakhouse in KC. Those guys know how to select a piece of meat and they know how to prepare and serve it in style.

I also prefer my beef to have enjoyed corn but slating farmers who have found an outlet for a different product is unseemly.
Our job is to produce what consumers ask for. Unfortunately, as farmers, we’ve lost touch with consumers and now have agro-processors as our customers which is what is leading us down this confrontational road.
Let’s not forget that no matter how deluded or how misguided they are, the customer is ALWAYS King.
